Context & Assumptions

Thermal sterilisation of low-acid canned foods relies on predictable destruction kinetics of heat-resistant spores, typically Clostridium botulinum. The classical “12-D” concept guarantees a 12-log reduction, but any target reduction can be computed from the same first-order model.
